Perfect Pancakes | Recipe

What should I have for breakfast? What is the best brunch food? How do I guarantee happiness for at least 10 minutes?

The answer to all of the above is, arguably, pancakes. Whether you’re a crêpe kind of person, or prefer fluffy, American-style stacks, I have yet to meet someone who doesn’t like pancakes. I fall into the second category most days. There is something so comforting about a huge stack of thick, spongy pancakes, piled high with all toppings under the sun.

I have lost count of the times I’ve made these now; I am pretty sure I could whip them up in my sleep and I believe I have perfected them (if I do say so myself…)

Below is the recipe that I have ended up with – it is a combination of many different recipes I’ve come across and a LOT of trial and error. One thing I have learned is that having a good, non-stick frying pan goes a long way. I use one from Tefal, similar to this one, but any decent pan that retains its heat evenly will work!

I am well aware that it’s possible to make healthy pancakes and I have had some very good ones. However, these are of literally no nutritional value but, they taste incredible.

Perfect Pancake Recipe: Makes 6-8
Definitely delicious, not at all nutritious

Ingredients

135 g plain flour
1 tsp baking powder
1/2 tsp salt
1 tbsp caster sugar

130 ml milk
1 large egg
2 tbsp melted (and cooled) butter

Choice of toppings

Optional:
100 g chocolate chips

Method

  • Sift together the flour, baking powder, salt and caster sugar (and chocolate chips if using) in a large bowl

  • Whisk together the milk and egg

  • Melt and cool the butter, then add to the milk and eggs

  • Combine the wet and dry ingredients to create a smooth batter

  • Pre-heat your pan on a medium heat – if it is not non-stick, you will need to grease the pan to ensure that your pancakes come away easily

  • Add spoonfuls of mixture to the hot pan

  • Cook until you start to see bubbles form on the top (about a minute), then flip your pancake and cook for roughly a further minute on the other side

  • THE FUN PART NOW – TOPPINGS!

  • Add your choice of toppings – you can never go wrong with fresh fruit, peanut butter, chocolate, syrup etc.
